Cajun Red Snapper with Creole Shrimp Cream Sauce, Wild Rice and Green Beans

Recipe:

Wild Rice - I use a dry fry method (thanks Marisol!)

Shrimp Creole Cream Sauce
8 med/lg thawed precooked Shrimp
Diced Onion and Garlic
Hot Sauce (like Tabasco...I used Chahula)
Butter
Flour
Milk
Cajun Seasoning (see below)

Sautee onion and garlic in 3 Tbs butter until transparent, add shrimp and 2 Tbs flour to make roux. Stir and cook on med heat until smells nutty (2 mins) turn heat low and add a bit of milk (like 1/3 - 1/2 cup) adjust for thickness desired. Stir until thickens. Add few tsp of Cajun seasoning and drops of hot sauce...depending on how hot you like it. Pour over cooked filets just before serving...also great over pasta with a bit more milk in it.

Cajun Red Snapper
3 filets of Red Snapper
Olive Oil
Cajun Seasoning
Paprika Oregano
Cayenne Pepper Parsley
Salt Chili Powder
Pepper Onion & Garlic Powder

Olive Oil and Cajun season both side, put skin side down on broiler pan and cook under broiler 10 mins...until flaky.

I picked up these recipes off of a google search and it was very VERY tasty. I'd say better than Red Lobster.
